Snowballs

Ingredients

  • 12 digestive biscuits
  • 100 g chocolate milk or white
  • 55 g butter
  • 200 g sweetened condensed milk approx half a tin
  • 1 pack pink and white marshmallows
  • desiccated coconut for rolling

Instructions

  • Crush the digestives very finely - place in a plastic bag and roll with a rolling pin. Prepare a bowl or tray with coconut for rolling the snowballs in and have another bowl of hot water to dip your hands in between rolling.
  • Melt the chocolate and butter together in a bowl in the microwave for 30 second bursts, stirring well until completely melted and smooth. Stir in the condensed milk and biscuit crumbs.
  • Dampen your hands and scoop a small ball of the chocolate mixture into the palm of your hand. Flatten the mixture out into a disc shape and place a marshmallow in the centre of the disc. Wrap the mixture all around the marshmallow, ensuring it is completely covered then drop in the bowl of coconut. Roll it around to cover completely with coconut. Repeat with all the marshmallows, making sure your hands are clean and damp before scooping the chocolate mixture onto your palm.
  • Depending on the size of the bowl of coconut I usually cover about 6 marshmallows with the chocolate mixture then roll these in the coconut and set aside before doing another 6.

Notes

If the mixture is too soft and sticky to roll around the marshmallow it may be too warm, leave it to cool for a few minutes and try again.  You need to work relatively quickly as you don't want the mixture to set before you get it rolled around the marshmallows.
