I’ve always loved baking. Cakes, biscuits, traybakes – I love them all!
My childhood was spent with my grandmothers who were both excellent bakers – they taught me skills from I was able to stand on a chair beside them in their kitchens and, as I got older I spent my Saturdays experimenting with new treats. I didn’t get much of a chance to bake when my five children were very small; however I started making wedding and celebration cakes professionally in 2006, when the youngest was about 6 months old. With the advent of my 50th birthday in 2023 and the arrival of my granddaughter in early 2024 I realised there were a few things I would like to do at this stage in my life. One was to research my family history, as each generation’s knowledge is often not passed on – but that’s a whole other story!
The other was to create a full and comprehensive record of all the things I bake. Many of my recipes have been handed down through the generations, a lot of them are not even written down and those that have made it to my recipe file often would make no sense to others – it’s just a list of random ingredients and no method. This is very much a work in progress and I hope to eventually have all my recipes included here – but I expect that will take some time.
I bake a mixture of recipes that have been tried and tested by my mother, grandmother and those of previous generations; I also enjoy creating my own recipes for new and traditional bakes.
All my recipes have a few things in common – firstly (and most importantly), they have already passed the Mawhinney taste test – if my husband, four adult sons and daughter don’t like it then it’s not worth baking! They are also easy to make and don’t contain a whole lot of complicated steps or obscure ingredients or require lots of different equipment – I’m very much a ‘bung-it-all-in-one-bowl’ type of baker.
