I have no idea what these would be called but this is what we’ve always called them, they were based on a traybake slice sold in the school canteen that four of my children attended. My middle son’s friends liked the school’s version but he told them I could make better from ‘proper’ ingredients ie real chocolate and butter, not cocoa powder and margarine. They set him the challenge to do this and Robert duly purchased one from the canteen and carefully brought it home for me to taste and replicate. Once the recipe was perfected to his taste he proceeded to make batches of them and sell them to his friends in school!
They are a very simple mix of traditional traybake ingredients – chocolate, butter, syrup, digestive biscuits, cornflakes and coconut and can be topped with a layer of chocolate. Preparation is minimal – crush the cornflakes lightly – you can do this by squashing them in your hands, they don’t need to be fine crumbs, just a little smaller than usual. The digestive biscuits are best finely crushed, the easiest way to do this is to place them in a large heavy plastic bag and roll over with a rolling pin until no lumps remain.

- 1 18cm x 28cm shallow rectangular tin or shallow 9" square tin
Ingredients
For the base:
- 170 g chocolate you can use milk, plain or a half and half mix of both
- 115 g butter
- 55 g golden syrup
- 115 g cornflakes squash these a little with your hands to break up slightly
- 55 g desiccated coconut
- 115 g digestive biscuits crushed
To cover:
- 200 g milk chocolate
- 50 g butter
Instructions
- Grease and line the tin.
- Put the chocolate, butter and syrup in a large microwaveable bowl and cook on full power in 30 second intervals until completely melted.
- Add the cornflakes, coconut and biscuits and stir well until mixed thoroughly.
- Press the mixture into the prepared tin, spreading evenly and push down well to form a firm base.
- Heat the chocolate and butter for the topping together until just melted, pour over the base and allow to set until firm then cut into squares.
