These rich, sticky fruity cornflake bites are very popular with little ones (and the not-so-little!). Made from just five ingredients they are quick and really easy and a nice treat made from cereal. They make a change from the more common rice krispie buns.

These fruity cornflake bites are great to make and popular with kids as
- they are sweet and chewy with soft jelly sweets
- they can be made in any size, perfect for small hands
- they take minutes to do and yield a decent quantity – I get about 36 small bites from this recipe so they are perfect for church events, fetes etc
- they don’t need to be stored in the fridge and will keep for about a week in an airtight container

To make these fruity cornflake bites you simply melt some white chocolate, golden syrup and a couple of tablespoons of milk together then stir in some cornflakes and small, soft jelly sweets. Use any small sweets you like, or even try chocolate ones. I used the tropical flavour jelly tots (a substitute in my grocery order – I didn’t even know such things existed until now) and they were absolutely delicious! The tropical flavours just go so well with the white chocolate and cornflakes. Traditional jelly tots also work well.
You could also make this in a traybake tin and cut into squares. Just press the mixture firmly down into the tin and allow to set before cutting. I like to make them in mini muffin cases – they are the perfect bite sized treat and not just as sticky to handle for little hands. Just place a spoonful of the mixture into each paper case and press gently down to ensure everything sticks together. You can add a sweet or some sprinkles on top for decoration.
Fruity Cornflake Bites
Equipment
- 2 24 hole mini muffin tins alternatively you could use an 18cm x 28cm traybake tin or 9" square
- 40 mini muffin cases
Ingredients
- 250 g white chocolate
- 250 g golden syrup
- 2 tablespoons milk you can use evaporated milk, whole or semi skimmed
- 150 g corn flakes
- 250 g jelly sweets eg jelly tots or you can use any small sweets of your choice
Instructions
- Line the mini muffin tin with the paper cases.
- Place the white chocolate, golden syrup and milk in a microwaveable bowl and heat on full power for 30 seconds. Stir well and repeat until the mixture is completely melted.
- Stir in the corn flakes and jelly sweets and mix thoroughly. If you wish, you can reserve some of the sweets and use to decorate the top.
- Scoop small spoonfuls of the mixture and drop into the paper cases. Press the mixture gently to fill the cases and if you have reserved any of the jelly sweets add one on top. Repeat until all the mixture is used.
- Set aside for a couple of hours until set and then remove from the mini muffin tins.
